Zucchini and Onions with Mozzarella Cheese



3 Tbl butter
12 oz sliced zucchini
4 oz sliced onions
1/2 tsp basil leaves
1 Tbl chopped garlic
1/2 tsp oregano leaves
1 large tomato – cut into wedges
6 oz Shredded mozzarella cheese


Melt butter over medium heat in a 10 inch skillet
Add all ingredients except tomato and cheese
Continue cooking, stirring occasionally until vegetables are tender
Add tomato wedges and top with cheese
Cover and let stand for 2 minutes until the cheese is melted.
