Potato & Onion Gratin Casserole


2 Lb   White potatoes,  1/4 slices

4 oz    Olive oil

4 ea    Yellow onions – sliced thin

4 oz    Italian seasoned bread crumbs

4 oz    Grated Parmesan cheese

2 tsp  Sea salt & cracked pepper mix



Preheat oven to 400F.

Distribute evenly, 2 oz of  Olive oil in the bottom of baking dish, .

Place half of the potatoes on bottom of dish and season with salt & pepper.

Place half of the onion on top of the potatoes and season with salt & pepper.

Repeat another layer of potatoes & onions.

Drizzle layer with remaining olive oil.

Mix bread crumbs, cheese, and parsley in a bowl and spread evenly across the dish.

Cover with foil and bake for about 50 minutes.

Remove foil and bake to brown the top  ( approximately 10 – 12 minutes).
