GREAT SUPER BOWL Food – Bacon+Chicken+Chile Cheese Sauce

Just in time to help you plan your  Super Bowl party!!!!!

Add a wooden skewer and it will be a fantastic pass around item.

Bacon wrapped Chicken Breasts with Chile Cheese Sauce

The Recipe

Ingredients:

8 slices bacon
4 boneless skinless chicken breast halves, cut in half lengthwise
(Making 8 long pieces)
1 (10.75-ounce) can condensed cheddar cheese soup
1/3 cup milk
1 teaspoon chopped canned chipotle peppers or bottled chipotle
hot pepper sauce (or to taste)
Dash Worcestershire sauce

 

Directions:

1. Preheat oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil; set aside.

2. Wrap a slice of bacon around each piece of chicken and place on the baking sheet. Bake about 20 minutes or until cooked through. Remove chicken from the oven. Preheat the broiler.*

3. Meanwhile, in a saucepan, bring the soup, milk, chipotle pepper and Worcestershire sauce to a simmer over a medium heat.  Turn off heat, cover to keep sauce warm.

4. Broil the chicken 4 to 5 inches from heat for 1 to 2 minutes or until the bacon is really sizzling. Serve chicken topped with cheese sauce.

*  If you want them on a wooden skewer,  insert skewer before wrapping the bacon on the chicken.

 

Marinated Chicken Breast

Ingredients:

4 oz  Olive Oil

1 oz lemon juice

1 tsp Salt & Pepper Mix

1/4 cup  Shallots –Chopped

1 tsp Thyme,Dried

4 each Chicken Breast

1 tsp Garlic  –Minced

1/2 tsp Oregano – Dried

Directions:

1. Combine all ingredients for the marinade.

2. Trim and pound chicken breast then pour marinated over chicken and allow to marinate for 12 – 24 hours.

3. Allow excess marinade to drain before cooking.

4. Cook until internal temperature reaches 165° F.

Chicken Picata

Ingredients

2  boneless, skinless chicken breasts,

1  tsp each of sea salt and ground black pepper

1  cup all-purpose flour

2 oz  butter

2 oz  extra-virgin olive oil

1/3 cup fresh lemon juice

1/2 cup chicken stock

1/4 cup brined capers, rinsed

1/3 cup fresh parsley, chopped

 

Directions

1.  Prepare chicken by splitting breasts in half, then flattened with a kitchen mallet into thin quick cooking pieces.
